  • In a small pot with cold water, cook eggs. Once water comes to a boil, let eggs cook for 10 to 14 minutes. Remove from heat and halt the cooking process. Peel eggs, cut in half, and remove cooked egg yolk.
  • In a bowl, mix egg yolks, mayonnaise, Dijon mustard, and vinegar until a smooth and soft mixture is obtained. Season with salt and pepper. Divide mixture into 4 bowls.
  • Add beet purée to a bowl, carrot purée to another bowl, broccolí purée to another bowl, and leave the last bowl as is. Mix until smooth. Stuff eggs with the colorful stuffings.
  • Garnish classic deviled eggs with paprika, beet deviled eggs with crumbled goat cheese, carrot deviled eggs with sesame seeds, and broccoli deviled eggs with chopped parsley.
