  • 2 cups sushi rice
  • 3 tablespoons rice vinegar
  • 4 tablespoons sugar
  • 1 tablespoon salt

  • In a bowl with cold water, add rice and let sit until water turns slightly white.
  • In a pot, heat 2 cups of water over medium heat. Add rice. Cover and bring to a boil. Lower heat and cook for 20 minutes over low heat or until water has been completely absorbed.
  • Uncover and let rice sit at room temperature for 10 minutes.
  • Transfer rice to a deep bowl. In another bowl, combine vinegar, sugar, salt, and rice. Mix with a fork without smooshing the rice.
  • Let sushi rice cool before preparing sushi rolls or serve sushi rice in a rice bowl with soy sauce and sashimi.
