  • In a bowl, mix butter, rosemary, garlic, thyme, fine herbs, salt, and pepper until completely incorporated. Divide mixture into two and set one half aside.
  • In a baking dish or a roasting pan, place turkey, stuff, and truce the legs with kitchen twine. Cover with butter mixture. Cover turkey with cheesecloth. In a skillet, melt leftover butter mixture and add white wine. Pour over the whole turkey.
  • Roast at 392 °F for 3 hours. Remove from oven and remove cheesecloth. Garnish butter and wine turkey on a platter garnished with fresh rosemary, apples, oranges, and cherries.
