Baked Brie en Croûte with Chile Jam

  • 1/2 cups sugar, for the jam
  • 1 teaspoon cinnamon powder, for the jam
  • 1 tablespoon garlic, finely chopped, for the jam
  • 1/4 cups ancho chile, finely chopped, for the jam
  • 1/8 cups morita chile, finely chopped, for the jam
  • 1/4 cups guajillo chile, finely chopped, for the jam
  • 1/4 cups dried cranberries, for the jam
  • 1/2 kilos puff pastry
  • some wheat flour
  • 1 Brie cheese, 0.8 to 2.2 oz
  • 1 egg, beaten

  • Preheat oven to 392 °F.
  • For the jam: In a pot over medium heat, cook oranges, orange juice, sugar, cinnamon, garlic, and chiles for about 20 to 30 minutes or until most of the liquid has evaporated and the oranges have begun to break down. Add cranberries. Remove from the stovetop, cool, and set aside.
  • On a clean and floured surface, roll out puff pastry with a rolling pin and cut a square. Set excess puff pastry aside for garnish.
  • Place puff pastry on a baking sheet. Place Brie cheese in the center and top with jam. Fold puff pastry on top to cover the Brie cheese completely. Using a bit of egg to stick the puff pastry strips to each other, weave together the puff pastry strips until you have a puff pastry lattice. Brush with egg and bake until golden brown.
  • Serve baked Brie en croûte with chile jam garnished with arugula, dried cranberries, and raspberries.
