  • 3 tablespoons butter
  • 1 1/2 cups onion, minced
  • 1 teaspoon sugar
  • 2 cups Jalapeño chile, cut into round slices
  • 2 cups chistorra
  • 3 cups cream cheese
  • 1 1/2 cups cheddar cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 cups fresh chives, chopped
  • salt
  • pepper
  • 3 cups pepperoni
  • some Manchego cheese, cut into strips
  • some saltine crackers, for serving

  • In a skillet over medium heat, melt butter. Add onion and sugar and caramelize for 5 minutes. Add Jalapeño chiles and chistorra and cook for at least 5 minutes. Set aside.
  • Mix cream cheese for 5 minutes until softened.
  • Mix cream cheese, cheddar cheese, paprika, garlic powder, chives, and previous mixture. Season with salt and pepper.
  • Line a chopping board with plastic wrap and pour cheese dip. Cover with more plastic wrap and shape it with your hands into a football. Refrigerate for 30 minutes.
  • Remove plastic wrap. Cover dip with pepperoni and arrange cheese strips to make it look like a football. Serve football cheese ball with crackers.
