Jalapeño Poppers

  • 12 Jalapeño chiles
  • some water, hot, for cooking the chiles
  • 1/4 cups white vinegar, for cooking the chiles
  • 1 cup cream cheese, cut into cubes, for the stuffing
  • 1 cup Manchego cheese, shredded, for the stuffing
  • 1 cup Mozzarella cheese, shredded, for the stuffing
  • 1/4 cups bacon, fried and finely chopped, for the stuffing
  • 1 teaspoon onion powder, for the stuffing
  • 1 teaspoon garlic powder, for the stuffing
  • salt, for the stuffing
  • pepper, for the stuffing

  • Cut chiles lengthwise, trim, and seed. Set aside.
  • In a saucepan with plenty of hot water, pour white vinegar and cook chiles for 15 minutes. Drain and set aside.
  • Soften cream cheese and mix with Manchego cheese, Mozzarella cheese, fried bacon, onion, and garlic powder. Season with salt and pepper. Mix thoroughly.
  • Preheat oven to 392 °F.
  • Stuff chiles and broil in the oven for 10 minutes. Serve Jalapeño poppers on a plate with tomato sauce on the side.
