  • In a pot with water, cook tomatillo. Turn off heat once water comes to a boil to keep tomatillo from turning bitter.
  • In a skillet with oil, fry onion until translucent. Remove onion and transfer to a blender. Add cilantro and tomatillo and blend until smooth.
  • Transfer tomatillo sauce to the skillet and add milk. Cook until thickened.
  • Dip tortillas in hot oil. Fill each tortilla with chicken, roll tightly, and place in a previously greased baking dish.
  • Repeat the process with remaining tortillas. Spoon over with tomatillo sauce and place Manchego slices on top.
  • Bake for 15 minutes at 356 ºF until cheese broils. Serve chicken enchiladas suizas.
