In a pot with water, cook tomatillo. Turn off heat once water comes to a boil to keep tomatillo from turning bitter. In a skillet with oil, fry onion until translucent. Remove onion and transfer to a blender. Add cilantro and tomatillo and blend until smooth. Transfer tomatillo sauce to the skillet and add milk. Cook until thickened. Dip tortillas in hot oil. Fill each tortilla with chicken, roll tightly, and place in a previously greased baking dish. Repeat the process with remaining tortillas. Spoon over with tomatillo sauce and place Manchego slices on top. Bake for 15 minutes at 356 ºF until cheese broils. Serve chicken enchiladas suizas.
