Authentic Sopes

It is impossible to think about Mexico without mentioning one of its many culinary wonders like these sopes! A thick tortilla with pinched sides is topped with a bed of beans, shredded chicken, requesón, romaine lettuce, and green salsa to celebrate one of Mexico’s most widely appreciated antojitos, sopes!

  • In a bowl, combine masa harina, water, and salt. Knead until masa dough doesn’t stick to your fingers.
  • Divide masa dough into 20 masa dough balls and flatten each one to shape them into thick tortillas. Using your fingers, pinch the sides up to form a tiny wall around the edges.
  • On a griddle, cook sopes for about 1 minute on each side or until slightly golden brown.
  • In a skillet, heat a bit of vegetable oil and fry sopes. Remove authentic sopes from griddle and drain on a paper towel-lined plate to remove excess oil.
  • Spread a bed of beans on each authentic sope and top with shredded chicken, requesón, lettuce, and a bit of green salsa.
