Chicken Birria

  • 1/4 onions
  • 5 cloves garlic
  • 7 guajillo chiles, trimmed, seeded, rehydrated
  • 2 ancho chiles, trimmed, seeded, rehydrated
  • 2 morita chiles, trimmed, seeded, rehydrated
  • 3 tablespoons sesame seeds
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 1 tablespoon allspice berry
  • 1 teaspoon clove
  • 1 teaspoon cinnamon powder
  • 6 chicken thighs, skinless
  • 6 chicken drumsticks, skinless
  • salt
  • 3 leaves bay
  • some onion, for garnish
  • some cilantro, for garnish

  • some tortillas, for serving

  • Roast tomatoes, onion, and garlic on a griddle until charred. Transfer chiles, water, sesame seeds, oregano, cumin, allspice, clove, and cinnamon powder to a blender and blend until smooth.
  • In a small pot add chicken, previously strained sauce, salt, and bay leaves. Mix and cover with a lid. Cook for 40 minutes.
  • Serve hot. Garnish with onion, cilantro, lime, and tortillas.
