  • 6 red beefsteak tomatoes
  • 3/4 onions
  • 2 cloves garlic
  • 1 slice bread
  • 3 árbol chiles
  • 6 ancho chiles
  • 1 cup unsalted peanuts
  • 2 cups chicken broth
  • 1 chicken breast
  • 1 pinch cumin powder
  • 1 pinch clove
  • 1 pinch ground oregano

  • In a pot with water, place chicken, onion, garlic, and salt and bring to a boil. Once cooked through, drain and set chicken broth aside.
  • On a griddle, roast tomatoes ½ onion, garlic clove, ancho chile, árbol chile, and bread.
  • Toast peanuts slightly. Set aside.
  • In a blender, combine tomatoes, garlic, onion, peanuts, clove, oregano, cumin, bread, chiles, and chicken broth. Blend until smooth.
  • In a pot, place chicken and blended sauce. Season with salt.
  • Cook for about 15 minutes and serve chicken in peanut sauce.
