In a pot with water, place chicken, onion, garlic, and salt and bring to a boil. Once cooked through, drain and set chicken broth aside. On a griddle, roast tomatoes ½ onion, garlic clove, ancho chile, árbol chile, and bread. Toast peanuts slightly. Set aside. In a blender, combine tomatoes, garlic, onion, peanuts, clove, oregano, cumin, bread, chiles, and chicken broth. Blend until smooth. In a pot, place chicken and blended sauce. Season with salt. Cook for about 15 minutes and serve chicken in peanut sauce.
