  • 1 1/2 cups elbow pasta
  • 1 tablespoon salt
  • 1/4 cups cow's milk
  • 2 cups sour cream
  • 1/2 cups chipotle chile
  • 1 clove garlic
  • 1 tablespoon butter
  • 500 grams chicken breast, cut into cubes
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 cup cheddar cheese, shredded
  • 1 cup Manchego cheese, shredded
  • salt and pepper

  • For the chipotle sauce: Bring a pot of water to a boil. Add salt and cook elbow pasta al dente. Strain and set aside.
  • Combine milk, sour cream, chipotle chile, and garlic in a blender and blend until smooth.
  • Heat a deep pot with butter. Cook chicken. Season with garlic powder, onion powder, salt, and pepper. Cook until chicken is cooked through.
  • Add previously blended sauce, cheeses, and cook until melted. Mix cooked elbow pasta. Cook for 1 more minute to incorporate. Season with salt and pepper.
  • Serve chipotle chicken mac & cheese.
