  • Preheat oven to 356 °F.
  • For the chipotle chicken: In a deep skillet over medium heat, fry bacon until crispy. Add onion and garlic and cook for 3 minutes. Add chicken, season with salt and pepper, and cook until brown.
  • Add cream, evaporated milk, and ground chipotle chile and cook until thick. Adjust seasoning and set aside.
  • In a skillet over medium heat, heat oil and beans. Season with cumin, salt, and pepper. Set aside.
  • Cut bolillo rolls in half crosswise. Remove crumb and spread each bolillo half with a bit of butter if desired. In a skillet or grill pan over medium heat, toast bolillo halves until brown.
  • For assembling the chipotle chicken molletes: Spread a bed of beans on each toasted bolillo half. Top with chipotle chicken. Sprinkle cheese on top.
  • Arrange chipotle chicken molletes in a baking dish and bake for 10 minutes or until cheese melts. Remove from oven. Serve chipotle chicken molletes topped with avocado slices, red onion, and the salsa of your choice.
