  • In a pressure cooked with vegetable oil, sear pork ribs and pork chump for 6 minutes. Remove and set aside.
  • In the same pot, fry onion and garlic until translucent Add cumin, cilantro, beef ribs, pork chump, and water making sure it covers the ingredients completely. Season with salt and pepper. Secure the lid and cook for 35 minutes over medium-low heat once it comes to whistle.
  • Open pressure cooker and add chicken, corn, cassava, potato, banana, and cilantro. Season with salt and pepper and cook for 30 more minutes or until vegetables soften.
  • Serve Colombian sancocho hot with white rice, banana slices, and avocado slices.
