  • 1 cup butter, at room temperature
  • 1 clove garlic, roasted
  • 1 tablespoon onion powder
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 chicken, about 3.3 pounds, skin-in
  • 1 pinch salt
  • 1 pinch pepper
  • 3 cups new potatoes, cut into halves
  • 2 cups sausages, cocktail-sized
  • 1/4 cups olive oil
  • pickled Jalapeño chiles, for serving
  • tortillas, for serving

  • salsa, martajada, for serving

  • Preheat oven to 428 °F.
  • In a bowl, mash softened butter with roasted garlic. Add onion powder, oregano, cumin, and paprika. Baste chicken with flavored butter.
  • On a baking sheet or container with rack, place chicken. Add new potatoes and sausage. Season with salt and pepper and drizzle with olive oil. Set aside.
  • Bake for 30 minutes at 428 °F. Remove from oven. Baste again with chicken drippings. Bake for 40 more minutes at 356 °F or until cooked through. Serve roast chicken and potatoes with pickled Jalapeño chiles and tortillas on the side.
