  • 1 cup green beans, cooked, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, peeled, for the sauce
  • 2 cups spinach, leaves, for the sauce
  • 1 1/2 cups oat milk, for the sauce
  • 1 cup requesón, for the stuffing
  • 1 teaspoon garlic powder, for the stuffing
  • 2 cups spinach, cut into strips, for the stuffing
  • 600 grams chicken breast, 7 oz per piece, skinned and boneless
  • 1 teaspoon olive oil
  • 1 pinch salt, for seasoning
  • some black pepper, ground, for seasoning

  • For the sauce: Combine green beans, onion, garlic, spinach, oat milk, salt, and pepper in a blender. Blend until smooth. Set aside until ready to use.
  • For the stuffing: In a bowl mix requesón, garlic powder, and spinach. Season with salt and pepper.
  • Cut chicken breasts with a horizontal cut without cutting all the way through. Stuff with requesón and spinach mixture. Close with wooden toothpicks. Season with salt and pepper.
  • Pour a dash of olive oil into a non-stick skillet. Place stuffed chicken breasts and brown on both sides over low heat. Once brown, pour green bean sauce. Cover and cook for 20 minutes over low heat. Remove from heat and set aside.
  • Serve spinach-stuffed chicken breasts with steamed vegetables.
