  • For the chorizo hash: In a skillet, fry chorizo, onion, cooked potatoes, salt, and pepper and cook for 10 minutes. 
  • For the masa dough: In a bowl, mix corn masa flour, wheat flour, vegetable oil, water, salt, and baking powder. Knead with your hands until completely incorporated. Set aside.
  • Form tortillas and stuff them with chorizo hash. Fold tortillas to form quesadillas. Repeat until all the ingredients are used up and set aside.
  • In a small-size pot, heat vegetable oil and fry chorizo hash quesadillas until crispy. Drain on a paper towel-lined plate to remove excess oil.
  • Cut open deep-fried chorizo hash quesadillas and garnish with lettuce, cream, queso fresco, and salsa.
