Preparation
For the chorizo hash: In a skillet, fry chorizo, onion, cooked potatoes, salt, and pepper and cook for 10 minutes.
For the masa dough: In a bowl, mix corn masa flour, wheat flour, vegetable oil, water, salt, and baking powder. Knead with your hands until completely incorporated. Set aside.
Form tortillas and stuff them with chorizo hash. Fold tortillas to form quesadillas. Repeat until all the ingredients are used up and set aside.
In a small-size pot, heat vegetable oil and fry chorizo hash quesadillas until crispy. Drain on a paper towel-lined plate to remove excess oil.
Cut open deep-fried chorizo hash quesadillas and garnish with lettuce, cream, queso fresco, and salsa.
