  • 1 1/2 cups butter
  • 1 1/2 cups sugar
  • 5 eggs
  • 1 teaspoon vanilla essence
  • 3 1/2 cups flour
  • 1 teaspoon baking powder

  • 1 cup pecans
  • icing sugar

  • In a mortar, mash bananas and set aside.
  • In a mixer, cream butter and sugar. Add eggs one by one, vanilla essence, flour, baking powder, salt, and pecans. Add mashed bananas and mix for 10 minutes.
  • Pour mixture into a loaf pan and bake for 1 hour at 356 °F.
  • Unmold, sprinkled with icing sugar, and cut banana pecan pound cake into slices.
