  • For the carrot cake: Preheat oven to 356 ºF. Grease and flour a rectangular cake pan and set aside.
  • In a mixer, mix flour, baking powder, baking soda, cinnamon powder, salt, and icing sugar. While mixing, add milk, plain yogurt, and eggs one by one. Add shredded carrots and pecans. Gently mix for 5 more minutes. Set aside.
  • Pour batter into the previously greased and floured rectangular cake pan. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • For the frosting: In a bowl, cream butter. While mixing, add cream cheese, sugar, lime juice, and lime zest. Mix until a soft mixture is obtained. Set a bit of frosting aside and divide it into 2 small portions. Dye one small portion with green food coloring and the remaining portion with orange food coloring.
  • On a chopping board, unmold carrot sponge cake and torte it. Fill carrot sponge cake with frosting.
  • Cover carrot sponge cake with more frosting. Garnish carrot sheet cake with carrots and pecans.
