  • In a bowl, mix pancake mix, eggs, melted butter, sugar, and milk. Beat until a homogenous mixture is obtained.
  • On a chopping board, peel bananas, insert a popsicle stick, and reserve.
  • In a pot over medium heat add oil and dip bananas on pancake batter. Remove excess batter and fry for 5 minutes or until banana pops begin to turn color. Place on paper towels to remove excess oil.
  • Garnish banana pops with melted chocolate and rainbow sprinkles.
