  • 2 cups vanilla cookies, wafer, ground
  • 1/4 cups butter, melted
  • 2 cups cream cheese, at room temperature
  • 3/4 cups condensed milk
  • 1/2 cups icing sugar
  • 1 envelope unflavored gelatin powder, hydrated and melted, 0.2 oz
  • 1 cup dark chocolate, melted
  • 1/4 cups butter, melted
  • 1/2 cups whipping cream, hot
  • 2 cups strawberries

  • In a bowl, mix cookies and butter until incorporated and until a paste is obtained. Place paste in cupcake pans, press, and cool.
  • In another bowl, beat cream cheese, condensed milk, and icing sugar until a homogenous mixture is obtained. Add gelatin little by little in an even stream. Pour cheesecake mixture into the pans on top of the cookie base. Refrigerate until solid. Unmold and set aside.
  • In a bowl, mix chocolate, butter, and whipping cream until a homogenous mixture is obtained. Coat cheesecakes and refrigerate until firm.
  • With the remaining ganache, coat strawberries and refrigerate until solid. With a bit of fresh ganache, stick strawberries to cheesecakes and refrigerate again. Remove and serve chocolate-covered mini cheesecakes.
