  • 1 cup cream cheese, cut into cubes
  • 2 1/2 cups coconut milk
  • 1 1/2 cups evaporated milk
  • 1 cup condensed milk
  • 1 teaspoon vanilla essence
  • 3 tablespoons shredded coconut
  • 42 grams unflavored gelatin powder, hydrated and melted, 6 envelopes, 0.2 oz each
  • some cooking spray
  • coconut cream, for garnish
  • shredded coconut, for garnish
  • shredded coconut, toasted, for garnish

  • In a blender, combine cream cheese, coconut milk, evaporated milk, condensed milk, vanilla essence, and shredded coconut and blend on medium speed until smooth.
  • Lower speed and remove blender lid. Pour unflavored gelatin little by little into the blender. Cover and blend until smooth.
  • Spray cooking spray on a napkin and grease a silicone gelatin mold completely. Pour mixture into the mold and refrigerate until set.
  • Once cold, unmold coconut tres leches gelatin and serve topped with coconut cream, shredded coconut, and toasted shredded coconut.
