  • Preheat oven to 374 F. Line a baking sheet with parchment paper.
  • Mix butter, water 1 ½ teaspoon of sugar, and salt in a medium-sized skillet. Bring to a boil stirring until butter melts. Add flour and stir over medium heat for 1 minute. Let cool for 5 minutes.
  • Whisk eggs and add them little by little to the previous mixture with a wooden spoon. Mix until perfectly incorporated. Form 10 to 12 dough balls and place them on the parchment paper-lined baking sheet. Brush dough balls with a bit of egg wash without dripping it on the baking sheet. Bake for 50 minutes until golden brown. Let cool.
  • Mix mascarpone cheese, ricotta, vanilla, and 3 tablespoons of sugar in a medium-sized container. Refrigerate until cold. Using a serrated knife, cut choux pastry balls in half. Place a bit of mascarpone mixture on top of one half of the balls and cover with the other half.
  • In a small bowl, mix nutella and whipped cream and microwave for 30 seconds until hot. Mix thoroughly and drizzle on top of the cream puffs. Sprinkle cream puffs with ground hazelnuts.
