  • For the caramel: Pour sugar into a saucepan over medium heat. Stir constantly with a wooden spoon. Little by little it will turn brown and liquid. Once it is liquid and thick enough, remove from heat.
  • Grease a baking pan with butter. Pour hot caramel. Line the mold. Set aside.
  • Preheat oven to 374 °F.
  • For the cheese flan mixture: Combine double cream cheese, eggs, condensed milk, cornstarch, vanilla, and evaporated milk in the blender and blend until a homogenous mixture is obtained. Pour flan mixture into the caramel-lined pan. Cover with aluminum foil. Place over a tray with water. Bake on a water bath for 50 minutes at 374 °F. Cool.
  • Unmold easy cheese flan and garnish with caramel.
