  • For the guava paste: In a blender, combine guavas, sugar, and cinnamon stick and blend until smooth. Strain.
  • In a pot over low heat, cook the guava paste for 15 minutes stirring constantly until thick. Remove and let cool. Divide guava paste into two.
  • For the guava icebox cake: In a bowl, mix cream cheese, condensed milk, 1 ¼ cup of guava paste, and lime juice until smooth.
  • In a 7.8-inch cake ring, arrange a layer of cookies to form a base. Pour a layer of guava cream on top. Top with a later of cookies. Repeat the layers until the cake ring is full. Refrigerate for 2 hours or until firm.
  • For the guava mirror glaze: In a blender, combine 1 ½ cup of guava paste and hydrated unflavored gelatin and blend until smooth. Pour blended mixture into the cake ring and refrigerate until firm.
  • Unmold guava icebox cake and garnish with guavas, limes, and jam. Serve guava icebox cake.
