  • In a pot with water, cook guava, piloncillo, ground cinnamon, and citrus peels for 8 minutes. Cool.
  • In a skillet over medium heat, toast oatmeal stirring constantly. Add peanuts, cranberries, pumpkin seeds, and amaranth. Mix and toast for 10 more minutes over low heat stirring constantly. Set aside.
  • In a container, mix yogurt, honey, and lime zest thoroughly. Let cool for 30 minutes or until the mixture thickens.
  • In a glass cup, place a layer of yogurt. Top with a layer of oatmeal and a layer of guava. Repeat until all the ingredients are used up. Garnish guava parfait with orange and lime wheels.
