  • Preheat oven to 338 °F.
  • In a mixer bowl, mix eggs and monk fruit until doubled in size. Little by little, add coconut flour, cocoa, coconut milk, baking soda, baking powder, bittersweet chocolate, and coconut oil. Mix until a homogenous batter is obtained.
  • Grease a cake pan with coconut oil and dust with cocoa.
  • Pour cake batter into the pan and bake for 35 minutes or until a toothpick inserted in the center comes out clean. Let cool and unmold.
  • For the frosting: In a pot over medium heat, heat coconut milk. Add bittersweet chocolate and stir until completely dissolved. Refrigerate and set aside.
  • Mix frosting until doubled in size.
  • Frost cake and garnish with toasted almonds, raspberries, and chocolate shavings.
  • Cut a slice of keto chocolate cake.
