  • 2 cups toasted peanuts
  • 1 cup sugar
  • 1 cup piloncillo
  • 2 sticks butter

  • Grease a rectangular glass baking dish with butter.
  • In a pot over medium heat, melt 4 tablespoons of butter. Add one cup of sugar and one cup of piloncillo and stir constantly until a golden brown and thick caramel is formed.
  • Add peanuts to the caramel and mix thoroughly.
  • Pour mixture into the baking dish and flatten with a moist rolling pin. Let cool.
  • Unmold peanut brittle and cut into chunks.
