  • In a blender, combine masa dough and water and blend until smooth.
  • Bring water to a boil and add piloncillo. Let boil for 5 minutes or until dissolved.
  • Add blended masa dough and cook for 10 minutes or until thickened.
  • Add lime juice and cover with a cotton cloth.
  • Let sit for 24 hours. Stir. If tejuino is too thick, add a bit of water.
  • Serve authentic tejuino in a salt-rimmed glass with an ice cream scoop and garnish with lime.
