  • For the salsa: In a griddle over medium heat, roast onion, garlic, and serrano chile until cooked. Transfer onion, garlic, serrano chile, chicken broth, and cilantro to a blender and blend until smooth. Reserve until ready.
  • In a pan over medium heat, pour oil, add tomatoes and cook until their color changes. Incorporate the blended mixture and season with salt and pepper. Cook for 6 minutes. Reserve until ready.
  • For the huevos rancheros: In a non-stick skillet, heat oil over low heat, break an egg carefully to preserve the yolk. Season with salt and pepper and cook for 5 minutes or until desired consistency is reached. Reserve until ready.
  • For the tostada: Working one at a time, spread refried beans over each tostada and top with a fried egg. Spoon some ranchero sauce over each tostada. Garnish with crumbled cheese, avocado, and cilantro leaves. Serve immediately.
