  • In a skillet, heat olive oil. Cook onion and garlic until transparent. Add Poblano chile strips, yellow corn kernels, sour cream, salt, and pepper. Cook for 5 more minutes.
  • Transfer Poblano chile strips to a clay pot and crack the eggs on top of them. Season to taste. Cover the pot with foil. Cook on the stove for 15 minutes until eggs are cooked as desired.
  • Garnish with panela cheese and cilantro. Serve.
