Chamoy Apples

  • 3 Golden Delicious apples
  • 1/4 cups chamoy
  • 1 1/4 cups tamarind pulp
  • 1 1/4 cups chile powder
  • 1/4 cups sugar
  • 1/2 cups lime juice

  • Soak wooden skewers in lime juice for 10 minutes. Reserve.
  • In a small pot, heat tamarind pulp over medium heat. Reduce by half. Add sugar and caramelize for 5 minutes. Mix with chamoy and chile powder to form a dough. Reserve.
  • Push one wooden skewer into the stem end of each apple. Reserve.
  • Place dough between two plastic bags and roll out with a rolling pin.
  • Coat apples with chamoy dough.
  • Add more chile powder. Garnish and serve.
