Braised Pork Chops with Nopales

  • 1 tablespoon vegetable oil
  • 4 smoked pork chops, cut into thin strips
  • 1/2 onions, thinly sliced
  • 3 tomatoes, cut into cubes
  • 2 serrano chiles, sliced
  • 3 nopales, thinly sliced

  • In a skillet, heat oil and fry pork chops for 5 minutes or until brown.
  • In the same skillet, fry onion and tomato for 3 minutes. Add nopales and cook for 5 minutes until cooked through.
  • Add serrano chile and remove from heat.
  • For the molcajete salsa: On a griddle, roast onion, garlic, tomatillo, and tomato for 10 minutes.
  • Transfer roasted vegetables to a molcajete or a blender. Season with salt. Crush vegetables one by one adding salt at the beginning to crush it more easily.
  • Serve braised pork chops with nopales on a plate with molcajete salsa, tortillas, and beans on the side.
