  • For the cascabel salsa: In a pot heat oil. Add onion, garlic, cascabel chiles, and guajillo chiles. Fry until onion is brown. Add water and salt. Cook for 10 minutes.
  • Transfer chiles, orange juice, oregano, and cumin to a blender and blend until smooth. Set aside.
  • In a pot, add lard and fry meat over medium heat until brown for 15 minutes.
  • Add cascabel salsa, bay leaf, and season with salt and pepper. Cook for 20 minutes over medium heat.
  • Serve cascabel pork stew on a plate with rice and beans.
