  • In a small pot, add cauliflower and salt, and cook over medium heat for 20 minutes or until softened. Drain, cut into small chunks, and set aside.
  • In a bowl, mix cooked cauliflower, egg, Manchego cheese, and cornstarch, and season with salt and pepper.
  • In a skillet over medium heat, heat oil and ladle the previous mixture forming fritters. Fry for 3 minutes on both sides or until golden brown. Set aside.
  • For the pasilla sauce: In a blender, combine tomatoes, pasilla chiles, onion, garlic, and chicken broth, and blend until smooth.
  • In a small pot over medium heat, heat oil and fry pasilla sauce. Add epazote and season with salt and pepper. Cook until pasilla sauce turns color and has a slightly velvety texture.
  • Serve cauliflower fritters in pasilla sauce garnished with epazote.
