  • 10 tomatillos
  • 1/2 white onions
  • 4 serrano chiles, trimmed and seeded
  • 2 cloves garlic
  • 1 bunch fresh cilantro
  • 1 pinch salt
  • 5 cups pork rinds, cut into chunks 
  • 1 serrano chile, cut into round slices
  • 1/2 onions, cut into rings
  • 10 corn tortillas

  • In a pot with water, add tomatillos, white onion, serrano chiles, and garlic and cook through. Drain.
  • Transfer cooked ingredients to a blender, add cilantro and salt, and blend until smooth. Set aside.
  • In a small pot, heat oil over medium heat. Add blended sauce and cook for 10 minutes or bring to a boil.
  • Add pork rinds and cook until tender. Remove chicharrón in green sauce from the heat and serve with corn tortillas on the side.
