  • For the sauce: In a blender, combine chiles, tomatoes, onion, garlic, black peppercorn, and clove and blend until smooth. Set aside.
  • In a pot over medium heat, heat oil and cook onion for 2 minutes. Add chorizo and cook for 8 minutes or until cooked through. Pour in sauce, salt, and pepper. Stir thoroughly and cook for 5 more minutes. Set aside.
  • Place tortilla chips in a baking dish. Spoon chorizo sauce over. Sprinkle Oaxaca cheese on top. Bake for 5 minutes or until cheese broils.
  • Garnish chorizo chilaquiles with cream, onion, and cilantro.
