  • On a rack over direct heat, char Poblano chiles and turn constantly until evenly charred. Place Poblano chiles in a plastic bag and add sea salt until completely covered. Refrigerate for 15 minutes and let them sweat to peel more easily.
  • Using a knife, peel and rinse Poblano chiles under cold running water. Cut open lengthwise, trim, and seed. Cut into 0.1 inch-thick strips. Set aside.
  • In a skillet, heat vegetable oil and fry onion and garlic until translucent. Add button mushrooms and cook over medium heat until reduced. Add Poblano chile strips and corn kernels. Cook for 3 more minutes.
  • Lower heat and add sour cream and milk. Season with salt and pepper. Cook for 6 more minutes. Add panela cheese and mix. Cook for 2 more minutes and remove from heat.
  • Serve creamy Poblano chile strips with mushrooms with fresh tortilla chips.
