  • 2 tablespoons vegetable oil
  • 1 onion, cut into chunks
  • 2 cloves garlic
  • 2 tomatoes, cut into cubes
  • 2 tomatillos, cut into cubes
  • 3 pasilla chiles, trimmed and seeded
  • 2 morita chiles, trimmed and seeded
  • 1/4 cups fresh cilantro
  • 1 tablespoon allspice berry
  • 1 tablespoon cumin
  • 1 clove
  • 1 cup vegetable broth
  • 1 tablespoon salt
  • 1 cup onion, thinly sliced
  • 8 pork chops
  • 3 nopales, cooked
  • some queso fresco, for garnish

  • In a deep skillet, heat 1 tablespoon of oil over medium heat. Sweat onion and garlic. Add tomato, tomatillo, pasilla chile, morita chile, cilantro, allspice berries, cumin seeds, and clove and cook until tender.
  • Pour vegetable broth into the skillet and cook for 10 minutes or until reduced. Season with salt. Set aside and cool slightly. Transfer previous mixture to a blender and blend until smooth. Strain.
  • In another skillet, heat remaining oil over medium heat. Cook onion and pork chops until golden brown on both sides. Pour sauce and add nopales. Cook for 10 more minutes.
  • Serve pork chops with nopales in chile sauce and garnish with crumbled queso fresco.
