  • Heat a pan over medium heat. Add oil to the pan, once hot add onion and cook until translucent. Add garlic, bell pepper, and cook for 1 minute. Add zucchini, mushrooms, white corn, asparagus, and cook for 5 more minutes. Season with salt and pepper. Remove from heat.
  • Spoon a few tablespoons of vegan alambre onto each flour tortilla. Squeeze a bit of lime juice over each taco and top with green salsa.
