  • 2 cups chicken broth
  • 1 cup Poblano chile, charred, seeded, and peeled
  • 3 tomatillos, roasted
  • 1 garlic, roasted
  • 1/4 onions, roasted
  • 1/2 cups cilantro
  • some vegetable oil, for frying
  • 1 cup rice
  • 1/2 cups yellow corn
  • 1 cup Poblano chile strips
  • cilantro, for garnish

  • Place chicken broth, Poblano chiles, tomatillos, garlic, onions, and cilantro in a blender and blend until smooth.
  • In a skillet, pour oil, add rice, and fry until golden brown.
  • Add the Poblano sauce and bring to a boil. Lower heat and add yellow corn kernels and Poblano chile strips. Cover with a lid and cook for 15 minutes or until there is no liquid left.
  • Garnish with cilantro and serve.
