Bean and Chorizo Tlacoyos

  • 1/2 cups white onion
  • 2 cups chorizo
  • 1/2 kilos masa dough
  • 1 tablespoon table salt
  • some water, for kneading
  • 2 cups black beans, cooked
  • sour cream, for serving
  • green salsa, for serving
  • serrano chile, sliced, for serving

  • In a frying pan, cook onion and chorizo sausage over medium heat for 5 minutes or until the chorizo is crisp and brown. Reserve until ready to use.
  • Place masa dough on a smooth work surface. Add salt and some water. Knead with your hands until the masa softens.
  • Divide masa dough into 8 balls. Roll each ball of dough in your hands and pat it out to form tlacoyos. Fill each tlacoyo with refried beans.
  • In a comal or a smooth, round griddle, cook the tlacoyos over medium heat for 15 minutes or until cooked through.
  • Serve tlacoyos warm and topped with chorizo sausage, queso fresco, crema, green salsa, and serrano chile slices.
