  • 1/2 teaspoons pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • some salt
  • 2 cups bitter orange juice
  • 1 kilo pork chump
  • 2 kilos pork loin
  • some banana leaf
  • some masa dough
  • pickled onions
  • corn tortillas

  • For the marinade: In a blender, combine achiote paste, pepper, cumin, oregano, salt, and bitter orange juice and blend until completely incorporated.
  • Marinate pork chump and pork loin for 12 hours.
  • Pressure cooker: In a pressure cooker with water, place a rack and arrange banana leaves. Place pork chump on top. Cover pork chump with banana leaves and close pressure cooker. Once the pressure cooker whistles, cook for 40 minutes.
  • Steamer: In a steamer, arrange banana leaves and add remaining pork chump. Cover with more banana leaves. Steam-cook pork chump for about 1.5 hours until tender.
  • Oven: On a flat surface, roll out masa dough. In a baking dish, place pork chump and pour marinade over it. Cover baking dish with rolled-out masa dough, to keep pork chump moist while baking. Bake for 1 hour at 446 ºF. Remove baking dish from the oven as well as the masa dough cover. Let sit for 5 minutes. Cut cochinita pibil into strips. Serve cochinita pibil.
