  • Preheat oven to 352 °F.
  • For the pastor marinade: Combine all ingredients for the marinade in a blender and blend until a smooth adobo is obtained. Pour the adobo over the meat and marinate for 2 hours. Reserve.
  • Heat a skillet with oil over medium heat. Cook pork meat with the pastor marinade. Season with salt.
  • Heat oil on a skillet over medium heat. Fry tortillas lightly. Pat-dry excess oil with paper towels.
  • In a baking dish, place a layer of tortillas, pastor meat, pineapple, cheese, and repeat until filling up the dish. At the top, put a layer of cheese and pineapple. Bake for about 20 minutes to broil the cheese.
  • Remove from the oven. Garnish with cilantro and onion. Serve hot.
