Cheesy Enchorizadas

  • 1 garlic, roasted
  • 6 tomatillos, roasted
  • 2 serrano chiles, roasted

  • 1/2 cups chicken broth
  • 1/4 cups cilantro, leaves
  • 2 tablespoons vegetable oil
  • 1 1/2 cups chorizo
  • 1 cup Oaxaca cheese, shredded
  • 1/4 cups vegetable oil, for frying the tortillas
  • some corn tortillas, hot
  • sour cream, for garnish
  • avocado, cut into medium-sized cubes

  • For the chorizo sauce: In a blender, combine onion, garlic, tomatillos, serrano chile, chicken broth, cilantro, and salt and blend until smooth. Set aside.
  • In a pot over medium heat, heat oil. Add chorizo and cook for 5 minutes or until golden brown. Add blended mixture and cook for 5 more minutes.
  • For assembling the cheesy enchorizadas: On a chopping board, place a hot tortilla, add a string of Oaxaca cheese on top, and roll-up. Form several cheesy enchorizadas and set aside.
  • In a skillet, heat oil and cook cheesy enchorizadas for 5 minutes or until golden brown. Remove from oil and drain on a paper towel-lined plate.
  • Arrange cheesy enchorizadas on a plate. Spoon chorizo sauce over cheesy enchorizadas and garnish with cream and avocado.
