For the chorizo sauce: In a blender, combine onion, garlic, tomatillos, serrano chile, chicken broth, cilantro, and salt and blend until smooth. Set aside.
In a pot over medium heat, heat oil. Add chorizo and cook for 5 minutes or until golden brown. Add blended mixture and cook for 5 more minutes.
For assembling the cheesy enchorizadas: On a chopping board, place a hot tortilla, add a string of Oaxaca cheese on top, and roll-up. Form several cheesy enchorizadas and set aside.
In a skillet, heat oil and cook cheesy enchorizadas for 5 minutes or until golden brown. Remove from oil and drain on a paper towel-lined plate.
Arrange cheesy enchorizadas on a plate. Spoon chorizo sauce over cheesy enchorizadas and garnish with cream and avocado.
Presentation
