Chorizo Molletes

An easy peasy dish for a lazy weekday! These chorizo molletes are both scrumptious and easy to prepare. Do not overcomplicate yourself when cooking and let the bolillo rolls, butter, refried beans, asadero cheese, and pico de gallo do the hard work!

  • 4 bolillo rolls, cut into halves
  • 1/4 cups butter
  • 1 cup refried beans
  • 1 cup chorizo
  • 1 cup asadero cheese, shredded
  • 1 cup pico de gallo, for serving

  • Preheat oven to 392 °F.
  • On a griddle, toast bolillo rolls with a bit of butter. Remove from griddle and spread refried beans on each bolillo half.
  • Place chorizo and asadero cheese on top. Bake until cheese broils. Remove from oven and set aside.
  • Serve chorizo molletes on a plate with pico de gallo.
