Cranberry and Apple Stuffed Pork Loin

  • 3 tablespoons olive oil
  • 1 onion
  • 1/2 cups leek, chopped
  • 2 apples, cut into cubes and peeled
  • 1/2 cups cranberries
  • 8 leaves sage, finely chopped
  • 2 cups croutons
  • 1 egg, beaten
  • 2 tablespoons butter
  • 1/2 cups chicken broth
  • 1 kilo pork loin, cut into steak

  • Preheat oven to 374 °F.
  • For the stuffing: In a large pot, heat olive oil over medium-high heat. Add onion, leek, apple, and sage. Cook for some minutes until soft.
  • Remove preparation from heat. Add butter, cranberries, croutons, egg, salt, and pepper. Little by little, add chicken broth until all the ingredients are covered. Let stuffing cool.
  • Cut pork loin to a large, flat steak. You can ask the butcher to cut it for you.
  • Place stuffing over pork loin. Roll up little by little. Tie with kitchen twine to keep the stuffing from spilling while baking. Place stuffed pork loin on a baking dish.
  • Bake for 90 minutes (it could be less time depending on the thickness of the pork loin) or until it reaches an inner temperature of 158 °F. Remove kitchen twine carefully. Let cranberry and apple stuffed pork loin rest for 15 minutes before serving.
